3. Divide the mixture evenly into 6 cups of a muffin pan (or silicone baking cups). To prevent sticking, lightly grease the sides with cooking spray then put them in the freezer for 30 minutes
4. Thaw out 1/4 of a frozen cube at a time until it’s serving size. You may need to add more granola or yogurt if your muffin cups are too small in the beginning.*if you want to get fancy, you can use a pastry brush and paint on a design with the remaining strawberry yogurt mixture before freezing.
5. Bake at 350F for 20-25 minutes or until golden brown and slightly firm when lightly touched. Cool completely before removing from pan.
6. Store at room temperature for up-to-2 days or in the freezer for up to 2 months.*these cupcakes freeze well and taste even better iced!Notes:*you could substitute frozen strawberries for fresh ones, but I prefer frozen when available because the fruit is already clean and sweetened!
