3 tblsp. fresh cilantro leaves and flowers (chop the flower buds off) chopped in small pieces OR 1 tsp. of dried cilantro (dried cilantro can be substituted for the fresh) OR 1 tsp mint leaves and flowers chopped in small pieces OR 1 tsp. chaat masala OR 1 tsp green chilli powder OR 3-4 curry paps chopped and roasted in ghee OR ½ cup coriander leaves (chopped) 1 1/2 tsp. salt¼ tsp. ground turmeric1 tblsp. ghee2 tblsp. unsweetened grated coconut (finely grated or powdered)Method:Method:Heat oil in a small pan and add the onions, garlic, cilantro, chaat masala and green chilli powder. Sauté for about 5 minutes until onion is soft and translucent. Grind together the coconut, coriander leaves and turmeric with little water to form a smooth paste. Add to the sauteed mixture and cook over medium heat until spices are fragrantAdd chopped coriander leaves, mix well and remove from stove topAdd ginger-garlic paste right before serving . 1 cup low fat yogurt (I’ve used natures choice) – I used 1 cup low fat milk yogurt for this recipe2 tsp chopped green chillies1 tsp chopped cumin seeds3-4 tsp low fat cream cheese, cut into small cubes5-6 curry leaves, finely sliced (optional)Salt to taste1. Heat a pan and add the onion in it. Saute till the onion turns golden brown colour but do not burn it.2. Add the yogurt in this mixture3. Mix well and cook for 5 minutes on medium flame4. Now add the spices one by one (cumin, green chillies, salt or as per taste)5. Add a few drops of oil to prevent sticking and mix well6. Cover the pan and reduce flame to very low7. Keep aside8. Use a fork to mash down the ra isins and mix well until you get a smooth mixture9. Remove from flameNow this is the time to add the chopped green chillies, cream cheese cubes and curry leaves (if used), mix well.10. With the help of a spoon, make small balls with the mixture and keep aside in a refrigerator for 10-15 minutes.11. Heat oil in a pan and shallow fry the veg balls one by one on medium heat till they turn golden brown in colour.12. Just before deep frying each ball, remove them from flame and coat them with a little oil.13. This can be done either in an oven at 160C for about 20-25 minutes or on griller at 180C for 4-5 minutesYou can garnish this with coriander leaves and mint leaves if you like.
